Recipe for creamy cheese carrot cake



A cousin gave me this carrot cake recipe as a gift.This is a delicious treat with a cream cheese surprise center.My husband and two young children loved it too!

* Ingredients :

° 3 cups shredded carrots
° 1-3/4 cups of sugar
° 1 cup canola oil
° 3 large eggs, room temperature
° 2 cups all-purpose flour
° 2 teaspoons of baking soda
° 2 teaspoons ground cinnamon
° 1 teaspoon salt
° 1/2 cup chopped pecans
+filling:
° 1 package (8 ounces) soft cream cheese
° 1/4 cup sugar
° 1 large egg, at room temperature
+frost:
° 1 package (8 ounces) soft cream cheese
° 1/4 cup soft butter
° 2 teaspoons of vanilla extract
° 4 cups confectioners' sugar

* Directions :

In a large bowl, beat carrots, sugar, butter and eggs until smooth. In a large bowl, combine flour, baking soda, cinnamon and salt. Gradually whisk in the carrot mixture until blended. Stir in pecans. Pour 3 cups of the mixture into a 10-inch buttered and floured bowl. Grooved tube pan.
In a small bowl, beat cream cheese and sugar until smooth. Beat in eggs. spoon over mixture. Top with remaining mixture.
Baking at 350 degrees for 55-60 min Let cool for 10 minutes before removing from the pan and placing on a wire rack to cool completely.To create the frosting, beat the cream cheese, butter, and vanilla in a small bowl until fluffy. Gradually add confectioners' sugar until smooth. Frost cake. Keep it in the fridge.
