Chicken pot pie bake

*Ingredients :

°1 kg (2.2 lbs) pie crust
°1 egg yolk, beaten with a little water
To decorate:
°30 ml (2 tablespoons) olive oil
°2 onions diced
°2 carrots diced
°2 celery stalks cut into cubes
°500 ml (2 cups) chicken broth
°1 1/2 cups (375 ml) potatoes, cut into cubes
°80 ml (1/3 cup) flour
°80 ml (1/3 cup) melted butter
°1/2 cup (125 ml) 15% cooking cream
°750 ml (3 cups) cubed cooked chicken
°250 ml (1 cup) green peas
°Salt and pepper to taste

* Preparation

Prepare the filling. In  saucepan, heat oil on heat. Cooking onions, carrots, & celery for 3 to 4 min. Pour to broth & leave to boil. Add the potatoes and simmer for 8 to 10 minutes, taking care to keep them slightly crispy. In a bowl, dissolve the flour in the melted butter. Gradually pour into the broth while stirring. Add the cream and simmer for 2 to 3 minutes. Take off the fire. Add chicken, peas and spices. For reservations.
Assemble the pancakes. Prepare eight 6-inch (6-inch) aluminum tart pans. Divide the dough in half. On a lightly floured surface, roll out the first ball of dough and cut eight 20 cm (8 in) diameter circles. Put the dough into the moulds. Divide the filling between the pastries. Roll out the rest of the dough into eight 6 inch (6 inch) circles. Wet the edges of the first dough and then cover it with dough circles. Seal it around with a fork. Flatten the surface of the pancakes and brush with egg yolk. Bake for 35 to 40 minutes in a preheated 190°C (375°F) oven, until the dough begins to turn brown.
Freeze. Let cool on a wire rack, then cool in the refrigerator. Wrap each pie in foil and place in a freezer bag. Remove the air and seal. This dish can be frozen for up to 3 months.

Heating. Remove the foil. Place the pancakes on a baking tray. Reheat for 20 to 25 minutes in an oven preheated to 180°C (350°F). Halfway through, cover it with a sheet of aluminum foil.
