Lunch Lady Brownies



Do you know those delicious chocolate square cakes that are the flagship of American culinary traditions called brownies?

* Ingredients :

° 5 eggs
° 100 grams flour
° 220 g dark chocolate pastry (65% cocoa)
° 190 gm unsalted butter, cut into cubes
° 175 gm brown sugar
° 1 teaspoon vanilla extract
° 150g coarsely chopped pecans

* directions :

Preheat the oven to 180 ° C (convection).
Melt the chocolate in a double boiler and add the butter until melted. Remove from heat and leave to cool.
Beat eggs and sugar for 5 minutes.
Gently mix the melted chocolate and butter with the eggs.
Mix the vanilla, flour and walnuts and mix to get a homogeneous mixture.
Line a rectangular tray, about 8 x 30 cm, with butter paper.
Pour into the preparation and bake for 25 minutes in the oven.
Test for doneness by sticking the tip of a knife in the middle of the cake until it dries.
Remove the mold when the cake is completely cool, then cut it into squares.
The brownie can be eaten as is or with vanilla ice cream, custard or whipped cream.
