Avocado Tomato Salad

*Ingredients: 2 persons.

°40 grams red onion
°240 grams tomato
°170gm avocado
°30ml classic vinaigrette

* Preparation:

Chop the onion and soak for at least half an hour in a small bowl filled with water with a few drops of vinegar. This can be done the day before if you keep it in the fridge. The goal of this process is to make raw onions crunchy and easily digestible.

Cut the tomatoes into cubes and put them in a bowl or salad bowl. Drain the onions and add it to the pot. Cut the avocado in half and remove the pot. Roll the meat into small balls with a spoon

Parisian, or pieces of meat, and put in the bowl.
Pour classic vinaigrette to bowl & seasoning with salt & pepper. Toss very gently to coat everything in the vinaigrette and serve immediately.
