°15 ml (1 tbsp) Olive oil
°1 onion, chop
°454g (1 lb) cook chicken meat
°10 ml (2 tsp) Taco spice
°2 cups (500 ml) diced tomatoes (canned)
°250 ml (1 cup) black beans
°10 taco shells
°250 mL (1 cup) Armstrong Mexican Fiesta cheese, grated
Toppings of your choice
°Sour cream
°Iceberg lettuce, chopped
°Green onions
°Marinated jalapeño peppers


  Preheat oven to 200 ° C (400 ° F).
In  skillet on heat, brown onions in oil, stir, for 2-3 min. Add the chicken meat and spices and stir again. Reduce heat to low and add the tomatoes (do not drain them) and beans, cook, stirring occasionally, until the liquid has evaporated.
Placing shells in baking dish & garnish with mixture. Sprinkle the shells with Armstrong Mexican Fiesta Cheese and bake in the center of the oven for about 8 minutes or until golden brown. Serving with your garnishe your choice.
