Chicken Fried Rice

I have always been a big fan of fried rice. This version with chicken and vegetables will make you fall in love with this simple and delicious dish. Apparently I added about a liter of soy sauce in it before I ate it...I think I'm addicted to soy sauce?

* ingredients :

°4 tablespoons. olive
°3 celery stick
°3 large carrots, halved lengthwise, then sliced
°3 finely chopped garlic cloves
°1 Spanish onion, finely chopped
°1/4 tsp. Sesame oil
°1 c. Italian seasoning
°1 c. 1/2 teaspoon dried parsley
°600gm boneless, skinless chicken breasts, cubed
°1/4 cup soy sauce
°10 white mushroom, cutting to quarters
°150g snow peas, trimmed and halved
°5 cups cooked basmati rice (1 1/2 cups raw rice)
°3 eggs
°2 C Chinese napa cabbage, cutting to L cubes
°Salt & pepper 

* Methods  :

Heat olive oil in a large saucepan over medium heat. Add celery and carrots and cook for 5 minutes, stirring regularly.
Add garlic, onions, spices and sesame oil. Continue cooking for 2 minutes and mix well. Salt and Pepper.
Add chicken and soy sauce and cook for 4 minutes, stirring regularly. Then throw in the mushrooms and peas and cook for 2-3 minutes.
Raise the heat to the maximum, add the rice and mix well. Make a hole in the middle so that you can see the bottom of the tray. Pour the eggs into the center of the rice and stir for a minute to start cooking. Mix everything well and continue to cook for 5 minutes.
Remove from the fire and add cabbage and mix well! Serve immediately and add as much soy sauce as desired.
