German Potato Salad



German potato salad, or Kartoffelsalat, is a delicious and slightly exotic salad, perhaps a bit more similar to Swedish than the classic homemade potato salad, but it's definitely worth a try. This potato salad is a typical Bavarian dish, I had a feast in Munich last year, but it is also typical of Trentino and in fact it was while on vacation with my father in Castelrotto that I tasted it for the first time.

*Ingredients for 4 people:

°1 kg of potatoes
°3 tablespoons of seed oil
°1/2 red onion
°200 ml vegetable broth
°1 tablespoon minced parsley
°1 tablespoon chopped chives
°1 tablespoon of mustard
°1 tablespoon vinegar
°salt
°pepper

*Preparation:


Prepare the broth and keep it warm.


Wash the potatoes, then boil them (with the peels on) in lightly salted water for 30 to 40 minutes (check for doneness with a fork). Drain, peel and cut into 1 to 2 cm thick slices.


Clean the onion and chop it coarsely. In a large bowl, place the parsley, chives, oil, vinegar, mustard, salt and pepper, and mix, adding the hot broth.


Add the dressing to the potatoes, mix gently, and let them cool in the fridge for about an hour.


German potato salad is ready!
