Nutritious Scalloped Potatoes




* ingredients :

°2 tbsp  butter
°2 cup milk
°1 cup (125 g) Canadian Neuchatel cheese or cheese flavored with Canadian herbs
°1 cup (250 g) grated white Canadian cheddar cheese
°8 ounces (250 g) fresh mushrooms, sliced
°4 chopped green onions
°pinch of nutmeg
°A little fresh thyme
°Salt and pepper to taste
°6 new potatoes from Quebec
°1 cup (250 ml) breadcrumbs

* Methods :

Wash and chop the potatoes.  Melt the butter and saute the mushrooms and green onions for about 2 to 3 minutes over low/medium heat..
Gently heat the milk and Canadian Neufchatel or cheese flavored with Canadian herbs, stirring, for a few minutes. Add nutmeg and thyme and season with pepper and salt. Cook until soft and consistent.
Put the potatoes in a gratin dish, add the mushrooms and green onions. Pour the milk and cheese mixture on top. Sprinkle with the breadcrumbs and Canadian cheddar cheese and bake at 180°C (350°F) for 15 to 20 minutes.
