Chicken Wings


*ingredients:

°2 pounds chicken wings (tip removed, divided into ailerons and cylinders)
°1 tablespoon cooking powder (whatever you do, don't use baking soda)
°1-2 tsp kosher salt (more to taste)
°Favorite sauce for buffalo chicken wings to mix or serve as a side dish
°Or a combination of chicken wings sauce and BBQ sauce, my new favourite.

* instructions:

Heat the oven to 450 degrees Fahrenheit
Dry the chicken well with a paper towel. Place the wings in a large bowl. Sprinkling baking powder on wings. Stir until all wings are evenly coated with baking powder.
Line a large baking tray with aluminum foil. Place a cooling rack (see note) on top and spray with bam water or rub with cooking oil to prevent wings from sticking.
Place the chicken wings on the cooling rack, leaving space between the wings.
Put the baking tray in the oven. Reduce the temperature to 425 degrees Fahrenheit and set the setting to convection.
Bake for 30-40 minutes, until wings are golden and crispy.
Serve hot, drizzled with buffalo sauce or with salsa on the side.
