Italian Scampi Chicken Pasta




* Ingredients :

°1 shallot, sliced
°1 celery stalk, sliced
°2 carrots thinly sliced
°1 8 oz (227 g) kg mushrooms, cut into wedges
°2 tbsp. butter
°1/4 cup chopped Italian parsley
°2 cloves minced garlic
°3 tbsp. flour
°1 (398 ml) (14 oz) canned tomatoes
°1 c. chicken broth concentrate
°1/2 cup dry white wine
°3 skinless chicken breasts, cut into large cubes
°1 cup 10% cream
°3/4 pound uncooked shrimp, peeled and deveined
°11 ounces linguine
°Salt & fresh ground pepper

* Methods :

Melt the butter and sauté the leeks, celery, carrots and mushrooms.
Add parsley and garlic. Cook for 5 minutes.
Flour the vegetables. Strain the tomatoes.
Measure tomato juice and add water to get 500ml (2 cups) of liquid.
Add tomato juice, concentrated chicken broth, and white wine to the vegetables. Season with salt and pepper and cook for 10 minutes.
Add chicken and cream.
Continue cooking for 5 minutes.
Cut the tomatoes into cubes and add them, as well as the shrimp. Cook for 8 minutes.
Serve over pasta.
