°11 Breton bar (150 g)
°1 un-treated orange
°200 grams of cottage cheese with 40�t
°20cl liquid cream
°4 sheets of gelatin
°25 grams butter
°120 gm powdered sugar

* Preparation steps :

Mix cookies in coarse breadcrumbs. Mix it with melted butter. Distribute in a springform pan, packing well. Chill for 20 minutes.
Immerse the gelatin in a bowl of cold water to soften it. Rinse and dry the orange. Take the peel and grate it well over a bowl, add the cheese and sugar. Mix well.
Strain the gelatin and squeeze it by pressing it between your hands. Melt in 3 tbsp. of hot orange juice, then gradually pour into the fromage sauce, whisking lightly.
Whipping very cold liquid cream to whip cream. Gently incorporate it into the preparation. Pour into the mould. Keep for 12 hours in the refrigerator. Get out when you are ready to serve.
