Parmesan Potatoes with Roasted Garlic Butter

* Ingredients : 

°3 pounds (1.5 kg) small red potatoes, washed and quartered
°1/3 cup (80 ml) olive oil
°6 large garlic cloves, finely chopped
°Salt and black pepper
°1 c. to me. Soup (15 ml) Italian spices
°3/4 cup (190 ml) fresh grated Parmesan cheese
°1/2 cup (125 ml) butter
°1 c. to me. Fresh or dried parsley, to taste

To cook garlic roast potatoes with garlic butter and Parmesan: Preheat oven to 400°F (200°C). Grease a large baking tray with olive or non-stick oil and set it aside.
Cook the baby red potatoes in the boiling water for 5 to 8 minutes. They will be softer on the inside.
In a large bowl, combine 1/4 cup (60 ml) olive oil, garlic, salt, Italian seasoning, pepper, and Parmesan, mixing well.
Stir the boiled potatoes into the garlic and Parmesan mixture and mix well.
Arrange the potatoes in a single layer on the prepared baking tray. Place the baking tray on the bottom rack of the oven. Bake the potatoes for 25 minutes, flipping them after 15 minutes with tongs or a spatula, until the potatoes are golden and crunchy around the edges.
Meanwhile, gently melt the butter in the microwave and mix with the parsley.
Remove the roasted potatoes to the oven and sprinkle with butter and parsley sauce.
