Chicken Pot Pie


°1 cup potato, diced
°1 cup onion, diced
°1 cup celery, diced
°1 cup carrots, diced
°1/3 cup melted margarine
°1/2 cup all-purpose flour
°2 cups of chicken broth
°1 cup half and half
°1 teaspoon of salt
°1/4 teaspoon pepper
 °4 c chicken, cooked also chopped
°2 pie crust

* Methods:

Preheat oven to 400°F. Browning onion, celery, carrots also potatoes in margarine for 10 min.
Adding flour to sautéed mix, stirring well, cooking for 1 min, stir constantly. Mix broth and half . stirring to vegetable mixture.
Cooking on heat, stirring constantly, to thickened also bubbly.
Stirring in salt & pepper; adding chicken and stirring well.
Pour to a shallow 2-quart casserole plate and topping with pie crusts.
Bake for 30 to 40 minutes or until the crust is golden and flaky.
